Pfifferlinge Rezept: schneller Schmarrn
16. Oktober 2020Dieses Pfifferlinge Rezept ist schnell und einfach gemacht. Der Eierschwammerl-Schmarrn ist eine herzhafte Variante des Kaiserschmarrns. Eierschwammerl ist übrigens in Österreich der Begriff für Pfifferlinge. Als Hauptgericht unserer dreiteiligen Serie bringt er Euch diese Woche ein kleines Stückchen Österreich nach Hause.
Pfifferlinge Rezept: Eierschwammerl-Schmarrn
Zutaten für 4 Personen
Eierschwammerl-Schmarrn – das braucht Ihr:
- 300g Pfifferlinge
- 1 kleine Zwiebel
- 2 EL Butter
- Salz und Pfeffer
- 4 Eier
- 120 g Mehl
- 250 ml Milch (alternativ 200 ml Sahne)
- 2 EL Schnittlauch für die Garnitur
Pfifferlinge Rezept – So wird’s gemacht:
- Die Pfifferlinge putzen und klein schneiden. Die Zwiebeln schälen und fein hacken.
- Die Butter in einer Pfanne schmelzen und die Zwiebel darin glasig dünsten. Die Pfifferlinge zugeben und mit Salz und Pfeffer abschmecken.
- Die Eier trennen. Eigelb mit Mehl und Milch zu einem Teig verrühren. Anschließend das Eiweiß steif schlagen und unterheben.
- Die Teigmasse in die Pfanne über die Pfifferlinge gießen und gut verrühren.
- Den Schmarrn im vorgeheizten Ofen bei 190°C Heißluft für 20 bis 25 Minuten backen.
- Den Eierschwammerl-Schmarrn aus dem Ofen nehmen und in Stücke teilen. Mit Schnittlauch garnieren und servieren.
Natürlich schmecken Pfifferlinge am besten, wenn diese gerade Saison haben. Diese ist von Mitte Juni bis Ende Oktober. Jedoch gibt es diese auch in getrockneter Form oder tiefgekühlt – so kann man das Pfifferlinge Rezept auch außerhalb der Saison genießen.

Ach toll, Pfifferllinge. Als Prepper suche ich mir die Pilze im Wald immer selber zusammen, daher gibt es leider auch nocht so oft Pfifferlinge bei mir. Aber das hier ist ein tolles Rezept.
