Rezept: Biskuitroulade mit Kirschmarmelade
16. Oktober 2020Die Biskuitroulade mit Kirschmarmelade ist die perfekte süße Nachspeise. Wir feiern unser 10-jähriges Firmenjubiläum in Österreich mit Euch und möchten Euch einladen mit uns ein Drei-Gänge-Menü zu kochen. Wir haben drei original-österreichische Rezepte für Euch neu interpretiert. Denn Österreich begeistert nicht nur durch eine tolle Landschaft und einer Vielzahl an Kulturschätzen, sondern vor allem auch durch typisch österreichisches Essen.
Heute geht unsere Serie mit dem krönenden Abschluss zuende, dem Dessert: eine Biskuitroulade mit selbstgemachter Kirschmarmelade. So bringen wir diese Woche auch ein kleines Stückchen Österreich zu Euch nach Hause.
Rezept: Biskuitroulade mit Kirschmarmelade
Zutaten für 10-12 Stück
Biskuitroulade – Zutaten:
Für den Biskuit-Teig:
- 4 Eier (Größe L)
- 150 g Staubzucker
- 3 EL Sonnenblumenöl
- Mark einer Vanilleschote
- 150 g Mehl
- 2 TL Backpulver
- Optional: 1 Kappe Rum
- 1 Bogen Backpapier | 1 Geschirrtuch
Für die Füllung:
- 175 g Kirschmarmelade
Für die Kirschmarmelade:
- 1 kg Sauerkirschen
- 1 Pkg. Gelierzucker (500 Gramm, 2:1)
- 5 g Zitronensäure (5 Gramm)
- Optional: 30 ml Rum
Für die Garnitur:
- Frische Beeren
Biskuitroulade mit Kirschmarmelade – So wird’s gemacht:
- Die Eier mit dem Zucker einige Minuten in der Küchenmaschine aufschlagen, bis eine dickliche, weiße Creme entsteht. Das Öl und das Mark einer Vanilleschote in die Zucker-Ei-Masse einrühren. Mehl und Backpulver vermischen und unter Rühren unterheben. Optional eine Kappe Rum in den Teig einrühren.
- Den Teig auf ein mit Backpapier belegtes Backblech gießen, gleichmäßig verteilen und im vorgeheizten Backofen auf mittlerer Schiene bei 175 °C Heißluft für 20 Minuten backen. Anschließend aus dem Ofen nehmen, sofort auf einen Bogen Backpapier oder ein Küchentuch stürzen und mit dem Papier bzw. Tuch zu einer Roulade einrollen. Eingerollt vollständig auskühlen lassen. Tipp: Das Geschirrtuch mit Staubzucker bestäuben, damit die Roulade nicht anklebt.
- Für die Kirsch-Marmelade: Die Kirschen entsteinen und halbieren. Mit der dem Gelierzucker und der Zitronensäure vermengen und rund eine Stunde ziehen lassen. Das Kirsch-Zucker-Gemisch in einem Topf aufkochen, optional Rum hinzugeben und für vier bis fünf Minuten unter Rühren sprudelnd kochen lassen. Gelierprobe machen. Die Marmelade einpürieren. Die heiße Masse in destillierte Gläser füllen, verschließen und auf den Deckel stellen. Auskühlen lassen.
- Die Roulade ausrollen und das Papier bzw. Tuch entfernen. Mit der Kirschmarmelade bestreichen und wieder zu einer Roulade einrollen.
- Die Roulade in Scheiben schneiden und mit frischen Früchten garniert auf einem Holzbrett oder Teller schön arrangiert servieren.
Natürlich schmecken Kirschen am besten, wenn diese gerade Saison haben. Diese ist von Anfang Juni bis Ende August. Wer keine frischen Kirschen zur Hand hat, kann die Marmelade auch mit tiefgekühlten Früchten machen oder zur fertigen Marmelade greifen – so kann man die Biskuitroulade mit Kirschmarmelade auch außerhalb der Saison genießen.
